Is there any kind prevailing weather conditions that are more like to produce early morning mist over water?

Generally cool, still nights followed by a warm morning sun do the trick. Autumn is often the best time for mist but it does depend on the location and it usually burns away very quickly so you need to be out around sunrise. Usually you want high pressure weather systems and a bit of rain the day before can have spectacular effects in the right locations

Warm water with cold moist air just above it. That kind of thing usually occurs in Autumn time as nights become colder and longer but ponds and lakes are still relatively warm from the summer (takes longer to cool down). Also helps if the air is still and calm under clear air at night time thus promoting heat loss.

PS: Just noticed Scirocco's post, he's right with all that.

Ode to Autumn (JB Keats) "Season of mists and mellow fruitfulness" .................... Sounds like a good theme for some pictures.
