Which would be the best option for bird/wildlife photography on a budget of around £1000 new or second hand for use on a D7000?
Nikon 80-400mm VR
Sigma 150-500mm
Or some thing like a 300mm f4 + 1.4 TC
Or is there a better option for IQ, focus speed and accuracy on that budget?

I owned the 80-400, and the 300 f4 ... I sold the 80-400 and kept the 300 f4, works great with the 1.4TC and also the 1.7TC although it needs better light with the latter.
 
Trouble with wildlife & birding in particular, is you always tend to want more reach, but getting a 400 F2.8 or `just` a 500mm F4 prime is very expensive & out of reach for most of us.

The 80-400mm just isn't fast enough the majority of time, unless the light is great.

The Siggy 150-500 is relatively cheap, or the 50-500 comes within your budget & has a tad more useful range.
