I've read around a bit and see that the above will meter ok on a D700, but will I get a focus point confirmation? Also, is the aperture still controlled by the body?

Hi Joe,

You will get a focus confirmation point and the aperture is controlled by the aperture ring on the lens.

Excellent, thanks - does that apply to each and every AI and AI-s lens?

Yes, unless you have some very specialised lenses in mind. But AI/AI-S was just a specification, so all of them should conform really.

Thanks, I'm not considering anything specialist - perhaps a 135 2.8 or similar. I've never really had a go at manual focusing before.

The 105/2.5 AiS is a great lens, manual focus on the D700 is easy, you will get the confirmation dot to help you.

Probably better off using centre weighted metering

Here is a link to a thread on FM discussing the best old AiS lenses LINK

That's what I wanted to hear - and thanks very much for the FM link.
