These cameras have completely different handling characteristics so the first thing to do is get to a store and see which suits you better in that regard.
I've owned a D3100 and a D5100 and found the D3100 a much better camera to use because of the button layout. If you don't mind the awkward positioning of the buttons on the D5*** series then I would go for one of those.

I'm making pretty much the same decision. As far as I can see there really isn't much between them. I believe that the key differences (for me at least) are with the D5100 are you get a flip out screen, built in HDR and intervalometer, slightly longer battery life and 1 extra level of boost ISO. With the D3200 you get 8 extra megapixels and slightly less bulk and weight.
