It does say under the sample shots along with the EXIF data that a tripod was used.....bloomin' cheat!

I think he says somewhere on the site that although he could handhold it for a brief period, it wasn't actually usable like that. I think the shot of him handholding is more for effect to show off just how big the lens is.
