Just reading this book by Nick Onken, almost all the photos are shot between 1.4 & 2.8. I can see why for a lot of shot he wants to make the subject stand out, but he also has a lot of landscapes shot with same aperture. (eg Mongolia landscape 200mm f2.8 lens, iso 200, 1/4000 sec, f2.8 or a Dominican Republic beach 20mm f2.8 lens, iso 400, 1/6400 sec at f2.8)

I'd just like to know the artistic reasoning behind the parameters.

No idea, however I could see it not being much of a problem for a lot of landscape shots. Contrary to poplar belief you don't need to shoot at f/11-16 all the time.

I just thought for those shots you would want to shoot in the lens's sweet spot, rather than wide open or as I say is there some artistic reason.

Yeah that is what confuses me too, even though there is no need to shoot f/11 or f/16 you may as well go for the sweet spot of f/5.6 or f/8... It's not like the extra couple of stops is going to cause much of an issue lens shake wise...
