Printing black and white

Really stupid question, so stupid, when I tried to search for it I couldn't find an answer!
So far, all I have printed on my Canon 9500 mkII has been colour.
Personally, I am not a great fan of B&W in general, the image must be right. However at the weekend I had to take some images in low light (ISO 1600, F/3.2, t/8), and I think the only way of rescueing to a decent size is b&w.
On my old printer, you printed images in colour mode, and the printer enhanced the blacks by using the colour inks. However, given that this printer has 3 blacks, should I be printing in greyscale mode instead?

Can someone point me to a decent tutorial for how to judge the contrast (baby pics)?

My fave paper is currently the illford lustre duo, am I right in thinking though that a matt would be 'better' for this type of B&W?
 
you don't have to change to Gray scale when you have a B&W image. the printer will still use colour ink to print B&W unless canon gave something like epsons ABW driver which only uses the black ink.
