I'm shooting a wedding for some good friends (just because I happen to have the 'poshest' camera of all the friends, not been doing it long though).
I should be ok as I am good with crowds (i.e. don't mind bossing strangers and making an arse of myself) and have a half reasonable eye for a shot. I've even visited the venue and have some good ideas of where to shoot them. Also, if it's raining the ceilings are good for bouncing the flash.
Now, my only worry is that when we were there taking practice shots I often forgot to adjust the manual settings when taking the more casual shots (which is what they want - photo journalistic style). So, having had a play around I reckon my best bet is to use program and the histogram function and use the exposure compensation to shift the histogram around. This way I figure I can control the exposure a bit but am unlikely to cock it up completely, is there any reason why this would be a bad idea?

I've a list of all the formal shots and know where I've got to be when, I've got a helper too (in fact I've got two if necessary). The other thing in my favour is that the bar isn't opening until after the ceremony so I'll not be tempted to have a stiffener
