I know nothing about video at all, so this question could be complete rubbish :)

But I'm curious to know if you shoot video on a DSLR does that mean the shutter is firing to capture the video, and if so, wouldn't that have a massive impact on the actuation count?

no it just remains open for the entire period of shooting, more like recording live view then shooting a whole sequence of stills

The shutter will be open for the whole time. The actual output video data, as captured by the CCD sensor, is handled in an entirely different way when shooting video. This is also much more feasible as video resolutions are much smaller than a still - a full bandwidth, non-compressed high defintion video frame is only just over 2Mbytes in size.
