Decided to post some comparison photos taken with the Sigma 120-300mm f/2.8 with the 2X EX teleconverter attatched.

All photos were taken on a sturdy tripod, using remote release cable and mirror lock-up, at AV-mode.
All in RAW, sharpness was set to 0 (zero) at ISO-100.
These are 400*400 pixel crops from the actual photo, all converted to jpg using Photoshop.

These were taken from a cereal box, a Special K Apricot to be exact and this is the resized picture of the whole frame.

Where do you feel the 'sweet spot' is?

On the examples, f14 looks the clearest / sharpest.
 
Always talking about the lens with the 2X attatched, i would have to say that in real life conditions, using between f/8 and f/11 gives you the best results between ease of use (shutter speeds) and sharpness. Although it does need a lot of practice of your long lens technique.

f/14 is the sweet spot, at f/16 is about the same but after that defraction kicks in and IQ degrades.

Using anything from f/7.1 to f/14 is usable with the TC attatched.
