On Sunday I went out and took some pictures which included the sky I was not happy with them on the camera screen. And when I got home and down loaded them I was even more unhappy as the sky is rubbish in them all. I have no idea what I am best of doing to sort it out would I be able sort in photoshop or would I need ND filters.

nd grad filters would be good, or shoot raw and do some HDR or shoot raw and use one raw file to make a pseudo hdr image.

Photoshop won't really help in this case as the sky has 'whited' out and i doubt there is any image info there to work with. It's difficult to expose for both sky & ground at the same time and graduated ND filters would help in this respect.

Yes, these situations are always problematic.
A strong grad would have helped and bracket exposures to see what one has the best effect.
"Blown" skies never look good.
