Ross, we just did a "smoke " practical evening at our camera club and the main thing is to get your exposure right in camera. Don't worry about black, the mids and highs are what contain the interest.
Use "raw" and ensure you get highlighted parts well to the right of the histogram. That way all the super intricate detail of the smoke is captured and available to manipulate.
