Finally made the change and must say I am impressed so far. I bought a Macbook and am stuck as how to make Safari fill the whole screen.

Is there a way to cover the scrolly icons along the bottom?
 
This has got to be one of the most asked questions!!!

Just drag the bottom right corner of the safari window to make it the size you want (or type the question into the Google box at the top right of safari)
 
The maximise button works differently in OSX to how it does in windows. It makes the window as large as it needs to be to view the contents without scrolling (if possible) and not a single bit bigger. There are some hacks out there to make it behave in a windowsy way, but I didn't bother and got used to the way it works.
You can always resize the window yourself by clicking on the bottom right corner and adjust the size that way.

If you want to cover the dock (the scrolly icons along the bottom), you can set it to auto hide like the task bar in windows. There's a tick box somewhere in Applications > Settings > Dock.

Yep, Safari is a bit funny that way, it only fills as much of the screen as it thinks it needs. Firefox on the other hand will "maximise" to fill the screen if you click the green button.

You can also hide the dock like Jim said to keep it out of the way.
