....does this come with software that gives you all the adjustments to calibrate your monitor, as the adjustment I have at the minute are very limited.

Yes

Load program, plug in spyder, follow instructions on screen and let it do it's thing.

It will create a profile for your monitor that loads automatically on start up.

The only one to give you full control is the Spyder 3 Elite. The Express is useless, you can do about as well by eyeball. The Pro doesn't have the advanced features like luminance. Personally I'd look at X-Rite stuff, colormunki or Eye One Display 2.
