I've been looking at some stereographic images on Flickr. They look really good and I've been trying to work out how they are done and how many pictures they would be composed of generally.

I've only found 1 example on here but could anyone talk me through the basics?

The clue is in the name.. true sterographic photography will always require two shots and is usually done with a specialist camera (or a diy rig using two cameras) to take both shots at the same time.

However a lot of pseudo-3d photographic techniques have popped up.

There's an interesting how-to here on taking stereographic images using a regular (digital or film) camera to be viewed through a stereographic viewer.

I've done it at work. Marked out the floor, shot a scene, then moved the camera and shot again, keeping the central focus point on the same point of the image.

You can then convert channels to red & green in photoshop if you want to use the red/green glasses.
