Are we talking static portraits or active dogs - running, jumping etc.? Do you want tight shots or environmental shots? Do you have a "style"?
I've shot my dog many times over the years and my most commonly used lens is my 100-400, usually at 400mm and usually with a camera format smaller than full frame. The 70-200/2.8 is a fantastic performer too, as well as the 135/2. There are a great many ways to skin this cat (dog?). What do you have at the moment?
Some examples....
1D3 155mm f/2.8
1D3 400mm f/7.1 cropped in height only to fit 16:9 display format
5D2 155mm f/2.8
7D 275mm f/5.6
1D3 145mm f/2.8 quite a big crop, but I had to shoot loose as I did not know whereabouts the dog would appear over the jump
7D 195mm f/2.8
I would say that a 70-200/2.8 would be a terrific choice on a crop body, but maybe a bit short to cover all the bases on a 5D2. The 100-400 would be a pretty sweet match for focal length if you want to shoot action, and if you were picking only one lens I'd go with that. However, that doesn't mean there is no room for some funky perspective shots at much shorter focal lengths if you want to get more creative.
I personally use a Canon 55-250 to cover this zoom range, although as it's f/4-5.6 you don't get the super shallow DoF, and you need good light. However it's only £150 instead of £1500 for the 70-200 f/2.8
I don't think the 55-250 will work on the full frame 5d2...
I would also assume that if you have a 5d2 you probably have a bit of cash for the lens, of course you lucky Canon folk have the f/4 variants which are a great compromise.
