That is some display of what a modern airliner can take.
As for the trolley dollies and ascent/descent angles....I recall flying Air Jamaica from Miami to Mo Bay in late 70's/80's and the flight was I think just over an hour. They managed to fit 3 runs of rum punches in that time and that meant first and last was on the climb to cruising height and the landing approach the trolley needed good parking brakes!
