So how do you stop the white on the males from blowing out? - been puzzling me for ages as I can't seem to get the balance.

Andy. You don't always get the time to alter the exposure +or- so I always have my exposure set to over expose by 1 or 2 thirds of a stop. I shoot in RAW so I can bring the whites back in Lightroom. Then in Photoshop use the Image-Adjust Shadows/Highlights. Sometimes it takes a bit more work with either levels or curves. Hope this helps.

Yes David, two nice shots of a pair of Tuffted Ducks. Thanks for the shot info, I have also struggled with blown whites with shots of these birds.
