I have found a couple of videos on youtube on various things for my camera, can anyone recommend a good video tutorial on youtube for the 300s. PLEASE.

Have a look for Nikon DTv Julian. All of it is applicable to the Nikon range. It's by Scott Kelby and I'm sure it's on there.

+3 for DTOWN.

Take a look at Kelby Training too (kelbytraining.com), very good range for learning all types of photography and post-processing. $24.95 a month, which is very good IMO.

My vote goes to Downtown TV as well, loads of tips and useful advice there for D300 users (as well as other Nikons).

Do a search on youTube for DomBower he uses Nikon equipment and I've watched all of his videos now I think. Sooo informative and easy to follow. He's quite a funny guy aswell and it makes the info stick better.

I also like Cameralabs for a quick tour of the camera, great to get to know a little before you embark on your journey into the darkside.

Personaly I just b****r around with the camera until a shot pops out that I like. However this is not the best way to learn :D
