What would happen if I took a photograph with a camera that was sensitive to 380nm – 1000nm of light? would the photographs look normal? What filters are avalable?

Colours would be falsified. The UV part wouldn't influence the image much, as most lens glass absorbs it. IR will absorb in different colour channels according to the wavelength (it's pretty random). Daylight has roughly same intensities in visible and near IR wavelengths, so I'd expect some funky photographs.

The problem with the IS Pro is that as soon as you put a visible light filter on the lens, you won't see anything through the viewfinder. If live-view is anything like on the S5 Pro, it's pretty much unuseable.

Another thought: images might be blurry for the whole spectrum, as I don't think the glass will be able to focus all wavelengths in the same plane.
