Video lighting set up

I work in theatre and I'm looking for a lighting set up that can produce a look similar to the link below for video interviews with directors etc ...

Portability is key but also is good quality so that I'm doing the usual thing of buying cheap and finding it not up to the job.

Does anyone think a couple of Redheads is a good idea? Can you buy a dimmer unit for them?

Google three point lighting, red heads work well and the ones I use at uni have built in dimmers. Not cheap though!
