Whats the difference between the Jpeg quality symbols on Canon?

Just that, they refer to file size or image size.

There should also be a quality setting like standard and fine. Fine will be recorded at a better image quality whereas standard will be more compressed.

Ok, so fine is better quality then, Only I got confussed because on my 7d it still says 18M 5184x3456 for both fine and for compressed but the number of images I could get on the card was different. Thanks for your help :)

Yes, that's right. The number of megapixels (18) and the image size in pixels doesn't change with the jpeg quality setting. What does change is the file size - due to varying degrees of compression. The more compression you use the smaller the file size and the lower the image quality.

Storage is cheap - shoot Fine or, better still, raw.
 
As a VERY rough explanation...

Assume you're shooting a blue sky which is more or less equal blue, but not quite.

RAW will record each pixel and give you a data point for each pixel, 90% of them will have the same value.

Fine will think, "hey most of the pixels are the same" and so will say 90% of the pixels have value X (which uses much less space than recording every one of the 16mp = X)

Norm will think: "do you know what, they're all pretty much the same" so I'll call them all X except for a few that are obviously not. This uses even less space.

Basic will think: meh, they're all the same...
 
Storage is cheap, I can't see the point in using high compression, although there are occasions when using smaller files is handy.
 
Hi thanks everyone. Sorry for late reply, I have had a manic few days! Just wanting to cut down my editing/processing time really with the motocross so wanted to try shooting in jpeg to see if it helped. My conclusion is that yes I saved a small amount of time as the shoots that didn't need any work at all I was able to upload on to my website straight away. Thanks again :)
