Where to start?

I want to purchase a camera that takes amazing pics but is also user friendly - that is not too difficult to use for a "slow learner". Will learn as I go. Have a travel website and I want to explore photography more. My budget runs to 1000 pounds. I have visited all the local camera shops but get overwhelmed by all the info and choices. I also do not want to start off with a cheap camera and then have to upgrade in a couple of months.
Any advise would be greatly appreciated.

Any of the cameras you have handled will have an "auto" setting and the lens you buy with it will having auto focussing so you can start immediately without worrying about settings.

Don't forget it's not the camera that takes "amazing pics" but the person holding it, you can purchase well within your budget and still be very happy with the outcome.
