Which AF mode should I use on the Canon 5D M3 for moving cars and trains?

Single point AF or Single point AF if you are struggling. Cars and trains are pretty big targets so the AF selection might not be the answer you are looking for.
What issues are you having?
 
When I used to shoot motorsport with a Canon DSLR I generally used the 3 x 3 grid and AI Servo AF (Continuous AF).

So sorry, I said Canon 5D MK 3 ........ but I mean MK IV.

I have added a different AF Mode photo, please can you let me know which one (number 1 to 7) I should use for moving cars/trains, thank you.

When I was using 5D4 I used the one you have selected (marked 4 in your pic) then let the camera track using continuous auto focus.

You can use any of them, they all have their advantages and disadvantages. My own preference would be No 4.
