Which focusing screen to use?

I'd opt for the screen that uses a split image. Almost all film SLR#s had them at one time and getting very accurate focussing with them was easy.
 
I use a selection of split prism and fine matte (s-type) with my Zeiss lenses. The prisms are good for macro when you know that you'll be focussing close to the centre of the frame but I prefer the matte screens for the fast, general lenses.

What about centre focus recompose? I'm concerned about getting the S screen and still not be able to focus well enough.

Absolutely fine, Dan, as the distance gets greater or the aperture smaller but close up at f/1.2 can certainly give problems. I don't think you'll have an issue with the s-screen as long as it's calibrated well to the sensor.

Welcome to the club! Are you sure you want to risk changing the focusing screen on the 5dIII which is only a few weeks old? It's not as straightforward as changing on the 5DII and you might invalidate any warranty.
 
Starting from tonight, I'm going to try to use live view with and without magnification - to see how i manage - then I might consider a loupe :) although everyone will laugh at me..
 
I wasn't aware you could change the focusing screen on the 5D3. Is this a new thing as when I investigated this when I first got my 5D3 back in April there was no way to do it due to the active elements on the screen
 
It can be changed although it requires a screwdriver and doesn't simply unclip like previous versions.
