I'm looking to purchase (a) cable release or (b) IR remote. I have just purchased a d7000, looking to do a lot of long exposure work and night shots. Just wondering which is better?

A remote is better. If it is really cold you can sit in the car and still 'press' the shutter!
 
Long exposure and intervalography are probably the only two areas that a cable release wins out over a wireless remote.

If those are your main concerns then get a cable.

As for remotes, you can't really beat an RF-602 set for the price as it also doubles as a wireless light trigger.
 
Of the options the OP mentions, I would go for the cable release, although a radio one would be even better. Not sure about the D7000 but I know that some Nikons (and other brands) have just the one IR receiver which is on the front of the body - not ideal for much apart from self portraits or groups including the operator. (It's possible to obtain or bodge a mirror arrangement to allow use from behind the camera but some can't be bothered) The range of the IR remotes also tends to be relatively short, while the radio ones work over many metres.
