He's clearly mostly shooting birds and wildlife. As far as I can remember I've never found the need for more than 1/8000 or had the possibility of going that high most of the timeI shoot a lot at f1.2 and f1.4 and do often go above 1/8000, however I appreciate that a lot of people won't. Also, you do have the option of using ISO 50 if needs be.
With f1.2 and f1.4 lenses yes I have hit that limitation but once again it's not like a constant issue.
