Best Canon?

Depends what the pro in question is photographing.
 
1Ds3 (quality) and 1D4 (speed, reach) - one of each, covers most things. 5D2 and 7D makes a pretty good 'budget' alternative pairing.

In the USA a 20D is still eligible for CPS membership. :thinking: and in the UK a 40D is the lowest qualifying body.

Being pedantic any camera can be use for pro use, but asking for the BEST Canon then it has to be the latest 1D series model

As above, the best Canon cameras are the 1D series. For equestrian photography, I'd go for the 1D over the 1Ds, for the higher speed.
