Just bear in mind that the D700 will take shots at iso 6400 handheld which are more than acceptable quality (see here) whereas the same shot with the D300 will be noise filled and unacceptable quality. The D300 is more than up to the job so long as you remember to take a tripod.

You imply that you are not necessarily doing weddings but just church interiors. In this case, church permitting a tripod is your best friend and bracketing.
