do you intend to capture the movement or freeze the shots?
most fairground at night type shots are long exposure one's to capture the movement, and are generally in the 30sec exposure time,so a tripod is a must, shoot in manual,ISO100,mirror lockup[if your camera has it]and use a remote cable or 2-10 sec self timer.you may need to close the aperture down to f11-16 to get the length of exposure needed, but on the other hand,if your after shorter exposure times, adjust your aperture/ISO as necessary..
hi mark...okay,to freeze the shot, you really need to use flash to freeze the action.if you don't have an hotshoe flashgun, you could use the popup flash..but don't expect great results.if you do have an hotshoe flashgun, then shoot in manual and use high speed sync,as this will allow you to shoot at faster speeds than the sync speed of your camera to freeze the action[as you know, some fairground rides travel at a quite a speed]..
