I see lots of B/W images but with a person or an object that is still in colour any help appreciated:help:
 
in cs3 id create a copy of the background layer (possibly 2), then make one layer black and white (desaturate) id personally do the layer on top. then highlight around the part you want in colour (using the lasso tool) then delete the section you have picked on the black and white layer. and bobs your uncle it should be done :) (hope this helps a bit)
 
Simple way, is the following.

Open your photo in Photoshop.
you can either use
Layer> New Adjustment Layer >Hue/Saturation,
Turning the Saturation right down.
Or use
Layers> Channel Mixer>Monochrome.
from either of the above press ok.
click on Eraser Tool, adjust brush size, opacity etc,
Start going over the areas you want to return to colour ..

There are other ways but the above is just an easy way to start...
