iMac colour settings?

If you are referring to the settings in System Prefs > Monitor > Color. I would leave it set to iMac. This refers to the monitor profile that the system uses . Ideally you should have the monitor calibrated and profiled and use this. However in the absence of a custom profile use the default iMac one.
The colour gamut of the iMac is larger than the sRGB colour space. If you switched to this it would give you some real anomalies

i would say SRGB unless you need the higher colour gamut and use mainly colour managed software/applications

Whilst generic it does contain specific information as to the way the iMac screen responds. sRGB is a reference colourspace and knows nothing about your iMac or any other monitor.
If however you want to know what colour space to save your images in then sRGB would be a way to go . It's an international standard that enables images to be easily transported from one computer to another and keep the image data intact.
