Loosing Vividness

Ive changed the settings on my camera to add vividness and sharpness, they look sharp and colourful on the camera but they loose their colour when i download them to my computer. Is this because I'm shooting in RAW? If i shoot in JPEG would they stay the same after they are downloaded to the computer?
I know the sharpness and vividness can be added but its annoying watching the computer process them by itself and make them look worse than they originally were.
Im using a D7000 and Aperture.

Thanks Mike. Thats a good read.

Ill have a look at the Nokia NX2, do you use it?

I mainly use Lightroom 3 which I have set up to open my raws how I like to see them, then I tweak them further as required.

I have View NX2 on my laptop and use it when away from home. It's main advantage is that, being Nikon software, it can read the settings in camera when the photo was taken and open the raw using those settings. It is a bit limited in what you can do though, (no noise reduction for example), but not bad for a free program.
