How do you make one of those images where you can turn and look around 360 degrees and look up and down etc like you are there?

What special equipment do you need to have to get this done properly and what needs to be done to the images?

I think Autopano software and a fisheye or very wide lens I think will do it - not tried myself though. You can get automated panning tripod heads but unsurprisingly they are spendy.

Ideally the client doesnt want it to be too fisheye 'like' Im guessing take a standard pano image and then stitch. Then import to a program to let people rotate and view through flash.

Im hoping that a 24mm on a 5dmk2 would be wide enough

I've done basic ones with tripod & copy of huginn. Basically my method was use manual mode so the images are fairly constant exposure, wait until the Sunlight will be constant (e.g. no clouds nearby), then start shooting and turning. Avoid using polarising filters and falling over your kitbag while turning
