You can not as standard. If its jailbroken I think iSim does it.
Due to the size of sim cards storage, they just dont support moving over from phone to sim. Sim's have never really been developed much from when older phones used them for storage.
What you can do is get a 30day trial of MobileMe, backup them on that, export them, and then send to your new phone.
Dont forget to cancel MobileMe before the trial ends

Cant you just use itunes one last time and sync your contacts to windows address book, that way no matter what other phone you get it should allow you to sync your windows address book to your phone?
To be honest I dont know if it will work, but at least it will get your contacts onto your desktop, and I know Nokia's I've had in the past will sync with the windows address book!
