How high?

Take them all and change accordingly...

yep - depends how high and what you want to shoot!!!

Don't wear a white shirt either.

I went up in a microlight on Sunday, not quite the same but I went 3,000 feet. My 18-200 was sufficient :D

Any UK balloon pilot worth flying with shouldn't let you on board with arms/legs exposed anyway.

Is it an experience flight? Or do you know the pilot? If you really want to take all your gear up there, check with the pilot first.

Generally there isn't much room in baskets to store extra lenses and there is a big chance of a bumpy landing, so I wouldn't take anything in the basket that you wouldn't be happy getting knocked around.

I did a balloon flight a couple of years ago and the pilot kept the balloon quite low, to maximise the views. At the time I had a "prosumer" camera with a 200mm which was enough to catch 90% of the shots I wanted.
As mentioned there's not much room in there so you probably need to keep kit to a minimum
