raw to tiff to dng - dng very small. How is the quality?

Hi!
I have a question: with my a7 iv, when I load the photos into lightroom and then edit them in photoshop, they are saved as a lossless TIFF. Despite being reduced to the background, this TIFF is very large. RAW Original: 42MB, TIFF: 145MB . Now I thought I'd convert the tiff back to DNG afterwards to get a lossless, smaller format for permanent storage. This DNG then has only 7 MB.
First question: Is the DNG comparable in quality to the original RAW?
Second question: I changed the DNG to black and white in Lightroom. However, it is still displayed in color in the Finder. Do I have to save the DNG in JPG format in order to be able to use it in e.g. inDesign, print or on the web?
