68 years young and just getting back in to photography. Not sure where to start with image editing and post processing. My thought was to avoid subscription based solutions but find myself qualifying (legitimately) for an Adobe Creative student licence for about £193 for a year. Take that and see how it goes or purchase something outright?

You could try Affinity Studio for editing, it's free if you don't want to use the AI side of things.
Or Capture One, Pro License £336 One-time purchase. No new updates after purchase, you pay again if you really need the update(s), or go sub for rolling updates.

That does sound a lot. I had/still have Adobe photoshop CS5 but I wanted some of the new tools so I swallowed my pride and got a Photoshop subscription which goes out of my bank once a month, I have to say that the newer software does seem to do a better job and some of the tools and abilities look like Voodoo. Looking at the cost of what photoshop subscription costs me (other brands might be different) the subscription price doesn't look bad against the cost of buying new packages, if you even have that option.
Having said all that some people seem happy with free packages.

If you are not doing video (Premiere) and don't need Illustrator, then the Adobe Photography Plan giving you Lightroom and Photoshop at standard prices costs less than everything on the student licence.

Affinity is good. I've moved on to Darktable, which is much better for me. However the learning curve was very steep - and I'm fairly computer literate.
For video, I'd highly recommend Kdenlive.
I've got about 40,000 photos and videos and I'm using Digikam to manage them all. It does an excellent job of organising everything.

Digikam is amazing. And you are not locked in if you want to change. And it costs nowt to try it.

The main reason to go for Adobe is for the generative AI tools. Other reasons are numerous tutorials out there, industry standard so many plugins work on it. It really depends on your needs and wallet. If money is no object then definitely get it otherwise there’s plenty of cheap options out there. Best to check your computer specifications first before you purchase anything and use a trial option if available before.

The ease with which you can remove things and people from pictures and the way it fills in the background is amazing. I used to clear away litter and the like and wait until people walk out of the shot and hope that others don't walk in but these days you can can often capture the moment without annoying your subject and remove unwanted things from the frame. It's nothing short of amazing. Ditto the noise reduction.

Another vote for Affinity...does everything you need other than AI, as Gav said.
