500mm f/4 for me for a few reasons, most notably the best compromise between weight and reach and takes a 1.4xTC rather well.
I'd say that the 600mm is better overall if you are not bothered about weight but it is 1.5Kg heavier, which may not sound like a lot, but it is.
The 800mm would most likely give the fastest focus and give the best overall results but is uber expensive.
If possible, why not visit the British Birdwatching Fair from Friday the 19th to Sundy 21st August? Canon and Nikon always have all their long lenses on display ready to test (well they have for the past 3 years I have been).
