Which tripod and tripod head?

I have been trying to research but can't find much help to what I need so thought I would ask to see if anyone has some suggestions.

Basically I am looking to buy a new tripod which is sturdy and has a good height. I am looking mainly to use it when at air shows. I have also seen people this year with what looks like a special kind of tripod head that seems to give them better movement. Does anyone know what this type is called and can recommend a good tripod? I know I will have to save maybe a couple of hundred.

You want a gimbal head and a good tripod for fast moving subjects, what lens you planning to use on the tripod? As the weight of the setup will effect cost etc.
