Well, I don't know if this is helpful but I put my 2p in; I video/shoot dance shows for various people and I always take numerous cameras to get backup/different shots and the colours reproduction out of the camera is always different. The colour match that I use in FCPX has been reasonable...
Well, my first post in a long time I lost the mojo :( but getting it back slowly.
With critique: the normal shots are too pink, I would do a bt of colour adjustment to boost the red (but with out making it too imposing).
As for HDR, I agree with the above that the HDR give a more natural tone...

TS lenses are good for emulating that effect as well as correcting the perspective of buildings/subject as you've mentioned above. however, it looks a good shot but I'm not convinced that the TS effect does the shot justice, having it all in focus and maybe turning it into a B/W or film type...
Cracking first shot; I suggest that you turn it from the preset modes to preferably Av (or Tv, maybe P at a push) and learn from there right from the start as I did. Av controls the aperture (DoF in simplistic terms at this stage of your learning curve) and allows you to be more creative and...
