Light Metering Tutorials?

I feel I need a little more knowledge in this area.

I use my camera in full manual and am currently using centre-weighted average as the metering mode.

Now, with the snow I'm over-exposing by 1 stop over what the meter suggests and the histogram looks fine, as do the images. Now when the snow melts I'd just stick to keeping arrow in the centre and I gather the photos would be okay too.

I guess I can't complain as my photos are turning out okay but I feel I'm leaving it to change rather than fully understanding what I'm doing and why.

I re-read the section on metering in 'Understanding Exposure' and he goes on about metering of the blue sky or green grass/foliage. Now, I tried this with my 500d with both spot and centre-weighted metering and the photos came out under-exposed.

So, I'd really like to learn more on this subject as this is probably the most important part to get right.

If you have any advice or can post up some links to tutorials it'd be greatly appreciated! :)

Thanks for the links guys, very useful.

Any more, maybe that go into more depth on the subject or do they about wrap it up?
