Colour is one of my favourite subjects, but things get even wierder if you add time to the mix. Unfortunately, I can't find the the illusion that demonstrates how we try to see forward in time (eg when catching a ball).
 
There are a couple of good books by Andrew Parker that talk about the evolution of vision and then about colour. Really interesting reads.
