I think you got the settings about right for this...it's a long video though, have you tried playing it back at a faster rate? If you get the chance then I would try some night time big city footage. I am not sure what the GoPRo is like for it but this sort of timelapse with longer exposures...

I have had a D300 and now have the D7000 and a D7100 and I know what the OP is on about. There do seem to be alot of redundant and over clever settings for focus but they do have their uses. For motorsport though like suggested in another post you will probably find there are one or two...

This great shot...I agree with Jake though the horizon is wonky. Can be fixed in PS but you would lose some of the height.
