Yep, you could do it in text edit and upload it. Alternatively you could open up the file manager in cPanel like you did before (in the screenshot you showed), click on the little square box on the left of the "index.php" file so that it is selected, and then click the icon that says "code...

Correct. Put the two extra lines of meta elements below the existing ones. As long it's placed within the "head" element, everything should be dandy :).

I'm clueless as you are on SEO, but I would say you need to put a bit more descriptive content on your main page. A 3/4 line paragraph describing who you are and what services you offer just under the three images on your home page may make a difference.

I'm interested in the interfit strobies thingies too, particularly the Flash gun bounce set. Is anyone else getting these?
