I don't think you can choose F-stop, shutter speed or ISO but you can adjust the exposure. If you touch the screen (to select a focus point), brightness and shadow sliders appear. You can also select RAW.

I'd second the LX7 suggestion. Here are a couple from my LX5 which is the older version though any of the enthusiast compacts will do - just find one that you like the feel of.

I use a G1 and fancy a sensor upgrade. The G3 feels very strange in my hands. Nothing seems to be located in the right spot - particularly the shutter button. The G5 feels just right.

The bright EVF thing is perplexing. My G1 doesn't do it - even with the lens cap on. Have you checked your settings? Might be worth comparing yours with another to see if it's faulty.
