We're aiming to leave mid morning, stopping for 2nd breakfast and then early lunch, probably afternoon tea roundabout Reading, so should be in Cornwall at about closing time

Gloucester services is owned and run by the same family that run Tebay services in Cumbria. Hence it has lovely food, excellent service and a farm shop & deli stuffed full of delicious goodies!!
And getting past Bristol is a lottery; you might zoom past at 70+, or sit there for a couple of hours (specially on Fridays)!
According to What's On At Fistral Beach (Newquay), Next weekend sees them holding some sort of jet ski racing.
For North Cornwall from Bristol direction (i.e. pretty much anywhere other than the South coast from Southampton Westwards!), I would get onto the North coat road as soon as possible, especially in daylight. Saves diving South past Exeter only to bounce back up on the A30. (MUCH prettier route as well!)

If you are coming Way down west then Godrevy at Sunset is a must, but anytime is better then not at all.
Also Wheal Coates is worth a visit.
Were you thinking of something like coming off at Bridgwater and going via Minehead etc? The roads may be pretty but a bit slow. Last time going to St Ives we went A30 then up on A397 (?) to Davidstow...

If you're not in a hurry, yes. The A30 shouldn't be too bad but an incident can block it for hours. Of course, the same goes for the A39 but at least that has pretty views if you do get stuck! IIRC it's the A395 that runs up from the A30 through Davidstow - that's the route we usually take from Exeter to Tintagel/Boscastle.
Although I'm from Devon rather than Cornwall, I wholeheartedly agree with that - avoid Ginsters! The only reason then seem to qualify as Cornish Pasties is because the factory is JUST inside the border. Strangely, the lorries always seem to head East when they leave the factory gates. FWIW, our favourite pasties come from Pengenna Pasties who have several shops dotted around the county. The even freeze well and are almost as good when defrosted (naturally rather than "ping cuisine"!) and reheated in the conventional oven.
If anyone's after "mystical" waterfall type stuff, (St) Nectan's Glen is worth a visit and the walk. Pretty sure the café's open at this time of year but check first (if you want/need it!)
